July is ice cream month and here I am getting in just under the wire. We get a lot of strawberries in the summer. You can make pie, cheesecake, shortcake and of course, ice cream. You have to make a puree prior but it's pretty easy. Here goes:
Strawberry Ice Cream
Ingredients:
1 lb. fresh strawberries divided (1/2 lb. for puree, 1/2 lb. chopped) 1 1/4 cups granulated sugar (1/4 cup for puree, 1 cup for ice cream) 1 cup whole milk 2 3/4 cups whipping cream 1 1/2 tsp. vanilla extract You can use soy milk instead of regular milk, if desired.
To make the puree, blend 1/2 lb. of strawberries and 1/4 cup of sugar in a blender. Chill in the fridge.
Ice cream directions:
Add cream, milk, sugar, and vanilla in a bowl. Mix and dissolve sugar. Put in fridge while the puree is getting cold.
Once the puree is properly chilled, add it to your ice cream mixture. Mix well. Freeze using either a ice cream maker or put in freezer. It should take about 30 minutes. Before ice cream is completely frozen, add strawberries. Serve and enjoy.
